Ground Beef Taco Chip Casserole
Ingredients:
- 1 Large bag of your choice taco chips
- 1 pound lean ground beef
- ¼ cup onion, finely chopped
- 1 packet taco seasoning
- 1 cup water
- 1 jar JULIE’S ZUCCHINI SALSA (your choice of heat level)
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded Colby Jack cheese
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Cook Beef and Onions: In a large skillet, brown the ground beef and onions over medium heat until the beef is fully cooked. Drain off any excess fat.
- Add Seasoning: Return the beef mixture to the skillet. Sprinkle the taco seasoning over the beef, then add the water. Stir until well combined and cook until the sauce thickens, about 3 minutes. Turn off the heat.
- Combine Ingredients: Stir in the salsa, cream of chicken soup, and sour cream until well mixed. Add the shredded cheddar cheese and stir until melted.
- Layer the Casserole: In a casserole dish, lightly crush 1/3 of the bag of taco chips and spread them on the bottom. Pour half of the beef mixture over the chips. Repeat the layers with another 1/3 of the chips and the remaining beef mixture. Top with the last 1/3 of the chips and sprinkle the shredded Colby Jack cheese on top.
- Bake: Cover the casserole dish with foil that has been sprayed with cooking spray (to prevent the cheese from sticking). Bake covered for 25 minutes. Remove the foil and bake for an additional 20 minutes until the cheese is bubbly and golden brown.
